
PoulTree Rice with Mushrooms and Chicken Drippings

Concept: Aromatic rice cooked with sautéed mushrooms, onions, and garlic, infused with the rich flavor of PoulTree chicken drippings.
Ingredients:
- Drippings from one PoulTree-roasted chicken (approximately 2-4 tablespoons)
- 8 ounces (225g) Mushrooms, sliced (cremini, button, or a mix)
- 1 small Onion, finely chopped
- 1 cup Cooked Long-Grain Rice (rinsed)
- Fresh herbs (optional - rosemary, thyme, or parsley, chopped)
Instructions:
Prepare the Drippings:
- Collect Drippings: After roasting your chicken in the PoulTree, carefully remove the chicken and set it aside to rest. Pour the drippings from the roasting pan into a measuring cup. You should have about 2-4 tablespoons.
Sauté Vegetables:
- Sauté Mushrooms & Onions: If using the roasting pan, ensure there are about 2 tablespoons of fat in the pan. Otherwise, heat the olive oil in a medium saucepan with a tight-fitting lid over medium heat. Add the sliced mushrooms and chopped onion and cook, stirring occasionally, until softened and lightly browned (about 5-7 minutes).
- Add Garlic: Add the minced garlic and cook for another minute until fragrant.
Toast the Rice:
- Add Rice: Add the rinsed rice to the pan and cook, stirring constantly, for 1-2 minutes, until the rice is lightly toasted and coated with the drippings/oil.
- You can cook for 20-30 minutes, while the chicken is finishing cooking, or you can let the chicken cook first (best results as skin will be crispier), then finish cooking the par-cooked rice. If you want to use uncooked rice, you will need to add water or chicken stock and it will take another 20 minutes or so.
Tips for the Best Rice with Mushrooms:
- Don't peek: Resist the urge to lift the lid while the rice is simmering, as this will release steam and affect the cooking time.
- Adjust liquid: If the rice is still too firm after the cooking time, add a little more broth or water, cover, and simmer for a few more minutes.
- Add other vegetables: Feel free to add other vegetables, such as diced carrots or bell peppers, along with the onions.
- Use different herbs: Experiment with different herbs, such as rosemary or sage, to change up the flavor profile.
