Every Thanksgiving cook knows the feeling: the turkey has been in the oven since breakfast, the sides are waiting, and you're still hoping the breast won't come out dry. Here's the good news. You don't need an 8-hour roast, a brine bucket, or a fancy gadget with a motor to get a juicy turkey. You just need to let the bird hang. And people who love turkey always say they'd eat it more often if it were easier to make — now you can, any time of year.
Most of us grew up roasting turkey flat in a pan or on a V-rack. Others have tried a beer can or vertical turkey stand that props the bird upright. PoulTree works differently: the turkey hangs from a sturdy steel rod over a skillet, with nothing underneath it but hot air. That one change does three things:
That last point is the secret to roasting a turkey faster. In one of our PoulTree videos, we roasted a 14 lb turkey in just 1 hour 42 minutes on the Turkey Talon. Your time will vary with your bird, your oven or grill, and the weather if you're cooking outdoors, but it shows how much quicker a turkey cooks when the heat can reach it from every side.
Remove the neck and giblets, pat the turkey dry inside and out, and season it generously. Dry skin is crispy skin, so take your time with the paper towels. No trussing needed.
Slide the turkey onto the rod so it hangs over the center of your skillet. Make sure it's secure and balanced before it goes into the heat. Our Gobbler rod-placement videos for 12", 13" and 15" skillets show exactly where the rod sits for each size.
Check your clearance first. The bird needs room to hang without touching the top of the oven or the grill lid.
Start checking early. Your turkey is done when an instant-read thermometer reads 165°F in the thickest part of the breast and the thigh. Cooking times vary a lot from bird to bird, so the thermometer is your best friend here.
Lift the turkey off the heat, let it rest for 15 to 20 minutes, then slide it off the rod and carve. Because the juices settled into the thickest meat while the bird was hanging, you'll see the difference the moment you slice into the breast.
Short on oven space? Moving the turkey to the grill is one of the best Thanksgiving moves you can make. It frees up the oven for pies, stuffing, and casseroles, and grill heat makes the skin especially crisp. Set your grill for indirect heat around 425°F, hang the turkey on your PoulTree over the skillet, and close the lid. It works on gas grills, kettles, smokers, and kamado grills like the Big Green Egg. The 12" Gobbler kit fits a Large Big Green Egg.
A flat roasting rack leaves the bottom of the turkey sitting close to its own juices, so the skin underneath often turns soft and pale. A beer can or vertical turkey stand props the bird up, but it blocks the cavity with a can or a cone, so the inside can't cook as quickly, and you're left balancing a big bird on a small base.
PoulTree is the beer can turkey alternative without the can. The turkey hangs, the cavity stays wide open, and the skin crisps all the way around. It also stores flat in a drawer when the holidays are over.
How do I keep my turkey from drying out? Hang it. When the turkey hangs, gravity draws the juices into the thickest parts of the bird, and the crispy skin holds them in. Pull it as soon as it reaches 165°F so it doesn't overcook.
How can I roast a turkey faster? Let hot air reach the inside of the bird. With PoulTree, the cavity is wide open, so heat moves through the middle while the outside roasts. In one of our videos, a 14 lb turkey was done in 1 hour 42 minutes on the Turkey Talon. Times vary, so always check with a thermometer.
What temperature should I roast a turkey at? For PoulTree, we recommend 380°F in the oven and 425°F on the grill. Either way, the turkey is done at 165°F in the thickest part of the breast and thigh.
Can I use my own skillet? Yes. The Turkey Talon clips onto the skillet or pan you already have. If you'd rather have everything in one box, the Gobbler kits include a Lodge cast iron skillet.
Is PoulTree a rotisserie? No motor, no spit, and no turning. You get rotisserie-style, crispy skin all around because the turkey hangs in the heat instead of sitting in a pan.
Order early so your PoulTree arrives in time for the holidays. Pick up the Turkey Talon for the skillet you already own, or grab a Gobbler kit with a Lodge skillet and you're set.
People who love turkey always say they'd eat it more often if it were easier to make — and now you can. With PoulTree, a juicy, crispy-skin turkey isn't just for Thanksgiving. Let the bird hang any time of year, and your guests (or just you) will taste the difference.
