Peruvian Chicken Cookout

Every new season I try to focus on a different dish, summer was burgers, fall this year is roast chicken. A customer at work was telling me about a new thing he was working on called the poultree @poultree.store it’s a game changer! Put it in the hanging hole in the handle of your cast iron skillet hang the chicken from it, 425 for an hour and it’s pretty much perfect. Tonight I tried it with @kenjilopezalt Peruvian chicken recipe from The Food Lab, while the chicken was resting I made a rice pilaf (type thing…) with the chicken fond in the skillet and dinner was done and quite delicious. I also made the jalapeño sauce from the recipe which is, phenomenal but I forgot to take pictures of that, take my word for it. One pan, and an hour and a half from beginning to end roast chicken greatness!

PoulTree on a Traeger

My poultree arrived today. Just pulled the bird off the Traeger. It’s cooling and we will dip into it in a few minutes. The “feel” of this method is just, what, right? yes, right. Can’t wait to have taste… The meat was tender and moist while the skin was perfectly browned with just the right amount of crispiness. I rubbed Michael Twitty’s Chicken Seasoning from Spice Tribe all over the bird before cooking. The potatoes were also perfect, having absorbed some of the drippings. I immediately told my sister she had to get one, too!
